The main chemical ingredient is sodium glutamate, abbreviated as MSG (also known as sodium glutamate or sodium glutamate), which is a source of umami (amino acid sodium salt).

In fact, many natural foods contain sodium glutamate, especially fresh ingredients such as kelp, bonito, kelp, tomatoes, etc. This is why people always use these ingredients to cook natural soups, "because It's full of glutamine, so it's so sweet!"

As for why it smells MSG and changes color? Gao Minmin believes that the point is not the monosodium glutamate itself, but the excessive intake of sodium. The main reason is that eating MSG may make you thirsty, because MSG contains 13% sodium salt, just like salt, if you eat too much, you will be thirsty! Also because there is sodium salt in MSG, it is easy to overdose, resulting in an increase in the concentration of sodium ions in the blood, and thirst for water. The Ministry of Health and Welfare also recommends that the total daily intake of sodium should not exceed 2400mg (=6g of salt)
