The Professor Of The Department Of Food Science Warns: Don't Let The "hot Pot Soup Base" Thaw At Room Temperature! Pay Attention To 3 Things When Packing Soup Base

When the low temperature hits in winter, the hot and spicy spicy hot pot will continue to tempt the appetite. In recent years, major brands have launched home-cooked hot pot soup bases, making it easier and faster to eat spicy hot pot! A small package of soup base, what knowledge should I pay attention to? In addition, some people eat hot pot outside and also pack soup base. Experts also reminded 3 things.

Winter is to eat hot pot! So in the correct way to choose and cook the soup base, how to enjoy and feel at ease? Chen Taiyuan, associate professor of the Department of Food Science at National Taiwan Ocean University, pointed out in the Food and Drug Administration's "Drug and Food Safety Weekly Report" that commercially available hot pot soup bases are mainly divided into "room temperature soup base packs" and "frozen soup base packs". The normal temperature soup base bag has undergone commercial sterilization steps, so it can be stored at room temperature for a long time. When purchasing, pay attention to the normal packaging without expansion. After buying it, avoid storing it in a light or overheated environment to avoid deterioration.

Frozen soup base means that the soup base is directly frozen after being heated and sterilized, rapidly cooled, so the flavor is closer to the original soup base. The Food and Drug Administration reminded that when purchasing, you need to confirm whether it is stored in the freezer, there is no trace of ice removal, and the package is intact and not damaged. Refrigerate to avoid increasing the risk of microbial growth.

Chen Taiyuan reminded that when thawing the soup base package, it is recommended to thaw it in a "refrigerator", or use flow thawing, microwave thawing, etc., to avoid slow thawing at room temperature, so as not to allow microorganisms to grow and cause the soup base to spoil . In addition, reheat cooking immediately after thawing, and cook thoroughlyBoiling to eliminate possible microorganisms.

In addition, many people like to go to the famous spicy pot restaurant to pack the bottom of the pot to take out, or take the rest of the bottom of the pot home after the dinner. Chen Taiyuan suggested:

1. The bottom of the pot should be eaten as soon as possible to avoid recycling.

2. If you need to save it before eating, it is recommended to boil it first and then let it cool. Pack the ingredients and soup separately, and store them in a refrigerated or frozen environment to reduce the growth of microorganisms.

3. The bottom of the hot pot contains grease, and the temperature after heating and boiling may be higher than that of the boiling water, so let the soup base of the hot pot cool down a little before packing.
