Dong's Foundation conducted an online survey of Chinese people's egg purchase behavior during the epidemic in June this year. The results found that 94% of people would buy eggs, and 48% of them would eat more than 1 egg a day, and found that 55% of them would buy eggs. People over the age of 2 eat more eggs than other age groups.
The survey also found that 36% of people often eat half-boiled eggs, and 1% eat raw eggs; but 42% of people do not wash eggs before cooking, but those who eat half-boiled or raw eggs , 55% will not wash eggs.
The survey further found that when buying eggs, 44% chose room temperature eggs, 31% chose room temperature eggs and refrigerated eggs, and 25% chose refrigerated eggs. However, 77% of people buy eggs and store them directly in the refrigerator.
Xu Huiyu, director of the Food and Nutrition Center of the Dong Foundation, pointed out that although eggs are nutritious, there are pores on the eggshell, and microorganisms have the opportunity to invade, especially Salmonella. Salmonella can cause acute enteritis, causing abdominal pain, chills, fever, nausea, vomiting and other symptoms, and even lead to fatal crisis.
Xu Huiyu explained that the birth canal of hens laying eggs is the same as the excretion of feces, and eggshells are easily contaminated with chicken manure, and there are often pathogenic bacteria such as Escherichia coli or Salmonella in chicken manure;
Xu Huiyu suggested that before storing eggs in the refrigerator, the dust on the surface of the eggs should be wiped off with a dry cloth, and then put in the refrigerator, because washing with water will increase the permeability of the pore structure on the surface of the eggshell and the outside world, which will increase pathogenic microorganisms. The possibility of invading the eggs, and incomplete cleaning or drying after washing, are very easy to cause microorganisms to proliferate and increase health and safety risks.
Xu Huiyu also reminded that if you need to use multiple eggs when cooking, it is best to use the "3-stage egg-beating method"; , contaminates the whole dish.
Xu Huiyu once again emphasized that you must remember to wash eggs before cooking, or you can buy washed eggs. As long as "wash before cooking + fully cooked", you can avoid the harm of Salmonella and E. coli.
